About this coffee The Meirisch family have been growing and producing some of the most sought after lots of Geisha in Nicaragua for many years, with a direct genetic lineage to the famed Don Pachi Estate in Panama. Purchased in 2003, the San Jose farm, which sits high above Lake Apanas, was slowly reclaimed after it had been abandoned for many years. Planting Javanica, Yellow and Red Pacamara, Caturra, Red Catuai, Yellow & Red Pacas, Ethiosar, and Geisha the coffees thrived in the rich, balanced soil, and combined with Erwin “Wingo” Meirisch’s creativity and expertise in processing has resulted in exceptional coffees year after year.
Ripe cherries from the farm are transported to Beneficio Don Esteban about an hour away, where they are sorted before being placed on a thick mat that allows airflow to pass between the ground and the coffee. The cherries are dried for 4 days under 100% sunlight at this stage before being moved to raised beds and dried under 75% shade for another 28 days. Finally, the coffee is moved to the warehouse where it rests for an additional month to assist in a more consistent moisture level across the lot before reaching the final stages of milling and preparing the coffee for export.
