About this coffee and collaboration Finca La Picona sits in the Picona Mountains of Dipilto, Nueva Segovia, a beautiful location marked by volcanic, phosphorus-rich soils, cool breezes, shade trees, and high elevation. These conditions slow cherry maturation and create sweet, dense coffees with remarkable clarity and complexity. The farm is owned by Martha Lucía Albir Sotomayor and spans nine-hectares in total, with six of those dedicated to coffee, where it is grown under a canopy of Inga, native hardwoods, búcaro, bananas, and fruit trees.
Implementing low-impact agriculture, and placing emphasis on biodiversity, with support from healthy soil, Martha has continued to refine the quality of coffee produced at La Picona, exemplified by placing this coffee in the top winning lots of this year’s Cup of Excellence program. Upon the three of us trying it, and with additional notes from Joey at Dapper & Wise, as a jury member during the International week, we were able to win her lot in the auction. In an additional effort of collaboration, we’ve packaged this coffee together, with our own approach to roasting, to be shared with you. We find different versions of similar profiles, with a common thread of ripe red fruit flavors, a deep sweetness like maple syrup or caramel, an underlying floral character, and a balanced acidity.
