About this coffee Behind Lino’s house, a small two-track path emerges that takes you steeply up the mountain through lush coffee and fruit trees. At the top of the path, sitting at 1900 masl is the Piedra Grande plot, where most of Lino’s Geisha plants grow. This is a beautiful section of the farm with expansive views of the farm and the larger Palestina area.
We’re lucky enough to regularly feature Linarco’s Geishas on our menu, and they’re always a crowd pleaser. With a known genetic lineage to Panama, Don Lino’s geisha has everything we love about quality geisha combined with a bit of that Colombian terroir that we love about coffees from southern Huila.
For this coffee, ripe cherries were harvested and carried down to Linarco’s wet mill, where cherries for sorting. After, the whole cherries were put into sealed drums for 48 hours to anaerobically ferment before being spread out to dry on covered patios for 24 days. Once dry, the coffee is hulled and moved to his warehouse in Palestina until it is time for export.
