About This Coffee Having visited his farm several times and spent nights with Lino, Los Jovenes, his sister, and his mother, we’ve formed a strong bond with Linarco and his family. In return, we’ve been lucky enough to feature his coffee year-round.
El Bosque is the original plot the Rodriguez Ospina family purchased over 70 years ago. It still has the original house on the lower half, where Lino grew up. The plot is small and grows only SL28—though half of it has been converted to pine, orange, and other trees. Located around the corner from the larger Finca Betania, it is north-facing and receives more shade than other sections of the farm. The shade, combined with the soil, seems to be ideal for SL28. The trees are smaller and closer to the ground than Bourbon Rosado or Caturra, but each one produces an abundance of dense, sweet cherries each harvest.
Ripe, sorted cherries are pulped and sealed in barrels for 60 hours, then washed clean with fresh water twice. The clean parchment is then moved to raised beds to dry for 22–24 days. Once fully dry, the coffee is stored in parchment inside grain bags to stabilize further before being prepared for export.
