About this coffee The young Don Santiago Caro, along with his parents, Jose Arcadio and Marbeluz, predominantly grow Caturra Chiroso and Bourbon at La Falda. In more recent years, Santiago has geared the family farm towards becoming it’s own coffee brand and gain greater recognition for their quality and receive the market access they deserve.

The Chiroso cultivar is a mutation of the beloved Caturra that quietly made it’s way onto the scene after it was identified as the winner of Colombia’s Cup of Excellence in 2014. In the years after, Chiroso was planted and grown at a number of farms in Urrao and has continued to receive greater recognition in more recent years. Jose Arcadio and La Falda placed the 7th the year before themselves, in 2013, with the same variety and this was the first time coffee from Antioquia broke the top 10. Their success in the Cup of Excellence competition encouraged them to plant more coffee.

After harvest, and once the cherries are sorted, the cleaned cherries are sealed in a low oxygen environment before pulping. The following six days continue their fermentation in mucilage and submerged in water before being finally washed clean and dried on raised beds. The combination of this unique variety and meticulous processing lends itself to tropical fruit flavors and vibrant acidity in the cup.

Our current roasting schedule is Monday through Wednesday and best enjoyed 14 days after roast date. Orders ship on Wednesdays.
