About this Coffee One of two heavy hitters we are releasing this month from our close friend and famed producer Linarco Rodriquez Ospina. Don Lino and family have mastered the art of coffee growing and processing, consistently producing clean, sweet, flavorful coffees harvest after harvest, and we are honored to have his coffees on our menu almost year-round.
We have featured Lino’s Geisha coffees on our menu several times, and the response is always outstanding – with intense, compact geisha profile flavors the coffees sell out insanely fast. So this time, after hanging on the farm and discussing things over some beers one evening, we contracted to sell two versions of Lino’s geisha: an Anaerobic Washed and an Anaerobic Natural. The first up of these heavy hitters is the Anaerobic Washed.
The coffee here comes from the El Silencio section of his farm, where he mostly grows Caturra, Tabi, Geisha, and Pink Bourbon varietals. After harvesting only ripe cherries, the coffee cherries are floated to remove any defective cherries before being pulped and floated again. Then the coffee is sealed in barrels for 48 hours where fermentation is closely monitored. Once complete, the coffee is washed clean and sorted, and repeated a second time to ensure this lot is the best of the best. This highly uniform lot is finally dried for 22-24 days on raised beds upon the roof of Lino’s house before it’s left to rest, and finally prepare for export.

We’ve been familiar with Lino’s coffee since 2013/14 and have been fans of his high clarity, fruit forward and wickedly clean coffees for the past decade. Which meant directly sourcing coffee from him when Idle Hands begun was a no brainer; and most recently, Peter spent a good time there with Lino in the second half of 2023 and delivered his mom her winning Cup of Excellence certificate on behalf of ACE. The time he spent there solidified our partnership with him after years of messaging back and forth. Peter and Lino continue to share weekly updates of family, bad domestic beers and the latest hits from Huila. Lino’s coffees continue to be some of the most exciting coffees on the Idle Hands menu every year.
