About this coffee Bourbon Rosado, or as it is referred to outside of Colombia, Pink Bourbon is one of the darling varietals coming out of Colombia in more recent years.

Last year we had the honor of selling Linarco’s Bourbon Rosado and like all of Don Lino’s coffees, the response was exceptional. In October or last year we were lucky to spend some time with Lino and his family at Finca Betania, and we immediately contracted a majority of his Bourbon Rosado harvest as we knew we had to offer it again.

Between the Ospina family, they’ve had 8 separate winning lots since 2018 in the prestigious Cup of Excellence competition; they’ve mastered the art of coffee cultivation and processing; consistently producing clean, sweet, flavorful coffees harvest after harvest.

This lot of coffee is the culmination of many trial runs and experiments aimed at maximizing the flavor potential naturally inherent within the coffee. After picking, the coffee has a 24hr dry fermentation on covered patios before being pulped. It then has a sequential 60hr anaerobic fermentation, boosting flavor and loosening the remaining mucilage, the final outside layers of the coffee seed, before being washed and dried slowly for 20-24 days on covered parabolic patios.

The process is fairly labor intensive, so it’s only produced in small lots, but Linarco has been working with this method for several years now and has perfected the process. The result is nothing short of show stopping - big, vibrant, juicy notes of strawberry, sweet lemon and underlying tropical fruits and florals are perfectly combined with caramel and brown sugar notes giving this coffee huge depth.

We’ve been familiar with Lino’s coffee since 2013/14 and have been fans of his high clarity, fruit forward and wickedly clean coffees for the past decade. Which meant directly sourcing coffee from him when Idle Hands begun was a no brainer; and most recently, Peter spent a good time there with Lino in the second half of 2023 and delivered his mom her winning Cup of Excellence certificate on behalf of ACE. The time he spent there solidified our partnership with him after years of messaging back and forth. Peter and Lino continue to share weekly updates of family, bad domestic beers and the latest hits from Huila. Lino’s coffees continue to be some of the most exciting coffees on the Idle Hands menu every year.
